revealing a SECRET recipe

I’ve been asked to share the recipe for the cranberry-pecan cake I blogged about yesterday (and for good reason…it’s delicious!) so…here it is! A secret family recipe will finally see the light of day 😉

Cranberry Christmas Cake

Recipe serves 12

  1. Chop 2 cups cranberries (fresh or frozen)
  2. Toast 1 cup chopped pecans
  3. Fold cranberries and pecans into your favorite white cake batter and divide between two 9-inch round cake pans (greased and floured)
  4. Bake at 350 for 25-30 minutes or until a toothpick inserted in the center come out clean
  5. Let cool and frost with Cream Cheese Icing (decorate with sugared cranberries, if desired)

Cream Cheese Icing

  1. Beat  together 1 (8oz) package of cream cheese, 1/2 cup butter (softened), and 1 teaspoon vanilla in a large mixing bowl until light and fluffy
  2. Gradually add enough powdered sugar to reach spreading consistency
